This is closely followed by the some smooth spicy oils. Additional complexity is added by the contribution from the special casks used for ageing – cedar wood and vanilla from the American Oak compliments the sweet fruity flavours of green apple, a touch of citrus and rich dried fruits from the Oloroso Casks.<br></p>
<p><b>World Duty Free Exclusive</b></p><p><br></p><p>A gorgeous polished rosewood hue, and a mellow, winey nose, which becomes caramelised apple tart (Tarte Tatin), with dry chocolate and a hint of tobacco. With water, the chocolate gains an orange peel twist. A voluptuously viscous texture and an overall sweet taste, with flaked almonds in the aftertaste.</p>

Subtle hints of leather and chocolate float in the background. Complex and satisfying.</p> <p>&nbsp;</p> <p>Colour: Light golden</p> <p>&nbsp;</p> <p>Taste: Honey, vanilla cheesecake and caramel sweetness are followed by bright notes of pear drops, freshly squeezed lemons and coconut. The finish is long and sweet with hints of toffee and spices.</p>
<p>Gold amber in colour. In the mouth, a balance of sweet sherry nuttiness, orange and toffee. Smoky undertones. A wonderful, velvety texture that's rounded and thick. On the nose, flowery (roses), buttery, pink grapefruit, citrus. The finish is sweet, crisp, minty and spicy and also very smooth, with plenty of length and balance. This is the perfect harmony of the distiller’s art and blender’s skill. This process gives the whisky greater depth and added complexity.</p>

A gentle nose, with vanilla sponge and baked apples – Eve’s Pudding? – a hint of planed oak and a trace of spice, and behind these a scent of the sea: salt breeze and sweet seaweed, warm sand and sea-tangle; opens up gradually, to become more marmalade-like. </p><p>Unreduced, the taste starts sweet, with some dry orange zest among the dusty oak notes lending a sharp, fresh edge. Drinks well, straight. With a splash of water, the nose becomes fruitier (pear drops, plums) and deeper (chocolate wafer biscuits) and gains a thread of smoke – a Highland Park signature. The taste is now sweeter and less zesty, but still with a memory of the sea – a very light saltiness, and some will recognise sweet Japanese seaweed – and that tell-tale whiff of smoke, particularly in the aftertaste<br></p><p><br></p><p>Silver medal winner - International Spirits Challenge 2011</p>

The aroma is distinctly smoky (an expired autumnal bonfire), with initial medicinal base-notes (light antiseptic; sphagnum moss) giving way for a while to the more familiar Speyside sweet toffee (chewy Highland Toffee) and fruity (dried figs, also Seville orange marmalade) scents, before returning to smoke, with a hint of pine sap. With a dash of water, the latter edges towards natural artists' varnish and the smoke spreads.</p> <p><br></p> <p>A smooth texture with a predominantly sweet taste, fresh acidity and a slightly mineralic finish. Multi-layered. At reduced strength, becomes slightly more smoky, and distinctly spicy in the finish.</p>

The assertive citrus notes are balanced by the layers of caramel, cinnamon and soft floral flavours.
